Generally speaking, the AIIMS Delhi mess food is like any other mess food and is not superior in any specific way. A few distinguishing features include

More than one mess in a boys' hostel that enables you to try a variety of foods
A night mess that caters to your late-night cravings.
A 24/7 coffee shop that serves decent food at reasonable rates.
A Nescafé that serves great coffee
There is a mess that requires monthly payment while another mess wherein you have to pay as you eat on a regular basis.
Variety and quantity-wise, the food served is decent.

Overall, AIIMS Delhi mess food is decent and edible enough to survive 5.5 years.
