I think choosing IIT (BHU), Varanasi is a better option here considering the various perks it will offer
IIT BHU is one of the oldest institutes and is daily a preferable choice to IIT Hyderabad, a new IIT.
My brother is an alumnus of IIT (BHU) Varanasi and has a special attachment to this place. He still is in touch with his friends from the college. Recently, a miracle happened. He got the golden opportunity to deliver a talk at IIT after 30 years of his graduation.
On reaching the institute he received a warm welcome, and a student even offered to take him on a tour of the campus.
The first visit he made was to his final year hostel that had the most amazing memories, Visvesvaraya Hostel. He realized that apart from a new flow and changes in the occupancy number, everything was just the same. After this, his 2nd and 3rd year hostel, the Limbdi Hostel seemed to have changed a bit and seemed livelier.
By 6 30 he was ready to deliver his lecture although anxious about the audience. Surprisingly enough the hall was full and many had come to attend the lecture. He spoke on the current economic condition of India and answered all their queries. After this, there was a group picture with the members of the club.
The students requested him to give an interview on the current economic scenario of the country. He was amazed by their enthusiasm and agreed to do so.
The visit brought back the best memories and he left with a heavy heart and teary-eyed in awe with the warmth and spirit of the students and the institute.
IIT BHU placements are decent for Ceramic Engineering. But very few students get core placements. Tata Steel is among the core recruiters that take part in the campus drive.

Your question is outright demeaning the credibility of one of the oldest technical institutions in India. In its initial years, IIT Kanpur was mentored by IIT BHU. considering this do you still think IIT BHU is inferior to other IITs? It has some of the most successful alumni who are contributing largely to the country and raising the flag of the institute high. It is wrong to negate its legacy of excellent and rich heritage just because of the lack of funds it receives. IIT BHU enjoys a good reputation as a part of the IIT family and only 2 kinds of people don't consider it an IIT. Those who go for a less preferred branch in the top IITs and make such comments because of their inferiority complex or those people who speak gibberish about other institutes just to promote their institutes during counseling.
Either way, rather than paying heed to such comments, believe what your heart says and remember every college has its own flaws so it is you to decide which flaw to overlook.

Freshers are allotted these three hostels(the first two are for boys and the last one is for girls): Vishweshvarayya Hostel, S N Bose Hostel, and Gandhi Smriti Mahila Chhatravas.
My brother lived in IIT-BHU Hostel and got to experience all the good and bad of hostel life at IIT-BHU. According to him:

OTHER FACILITIES: Common rooms, Canteens, Mess, TV Room, Badminton court, TT tables, and lawns. There’s also high-speed internet which can be connected through both, Wi-Fi and LAN
FOOD AND HOSTEL CANTEENS- The food is above average, better than other colleges and most of the other IITs.
Hostel canteens close between 2:30 A.M to 4:00 A.M. Students can still obtain food from within the campus at any time
HOSTEL TIMINGS- Apart from the first few months, there are no in-and-out hostel timings for boys. However, for girls, there is a strict time restriction, 10 PM.
HOSTEL STAFF AND ADMINISTRATION- The hostel staff and administration are friendly and supportive. You can also ask your Maharaja to make a dish that you wish to eat.
You will certainly face some challenges as you try to adjust to your new life. Living in and sharing small rooms with strangers will be difficult at first. You will have to learn to manage with very basic facilities, but as you make more and more friends at your hostel, you will come to enjoy every day that you spend there.

I have a few friends, who graduated from IIT BHU. One of them is an alumnus of the Chemical Engineering department. He speaks quite fondly about Prof. P. Ahuja. According to him, Pradeep Ahuja Sir is one of the best teachers, he got to learn from. During the MHRD meet of their department, most students selected Ahuja Sir as the best faculty member, unanimously.
My friends also talk about Prof O.N Singh from the Physics department, Prof. P.K. Mukharjee from ECE Prof V.V. Menon from the Applied Mathematics department.
All three of the Indian Institutes of Technology you mentioned are well-respected institutions with strong programs in engineering.
All the aforementioned institutes are at similar levels and will give you the IIT tag. So the final decision depends on your priorities more than anything.
