When choosing between several institutes, there are various things that you need to factor in before arriving at any possible conclusion. The first thing you need to decide is what matters to you most: branch or institute. If you have a specific branch in mind, you can definitely choose either of these two institutes. You can rest assured about placement as both of these two offer good placement to the students.
Whereas, if you are more inclined towards choosing a better institute, irrespective of the branch, you can choose MNNIT.

According to my cousin who studied CSE at MNIT, if you want a challenging job and you are aiming for PSUs, then mechanical engineering may be good. But the placements of mechanical even in top colleges like IITs will be lower than their CSE counterparts.

Mechanical engineering is going to be tougher even at IITs to secure a job. However, with some struggle, hard work, and years of experience, you may land a PSU job. However, CSE is not easy but getting an initial start to your career is easier in this branch with a good starting salary.

As per placements-
Based on the average package, I would recommend you opt for either MNIT Jaipur ECE or MANIT Bhopal CSE. MANIT Bhopal is a good option for B.Tech CSE. You’ll have good placement prospects as a CSE student at this college. Do consult some seniors from all these colleges/branches to make a more informed choice.
One of my friends graduated from IIIT Allahabad and he completed his CSE from the institute. He joined IIIT Allahabad on the recommendations of some of his professors from school.
In his opinion, IIIT Allahabad lives up to its reputation and is a very good place for placements. In addition to that, the institute is also popular for its coding culture, the network of alumni, research, etc.
As far as reputation goes, NIT Jaipur is also a renowned institute in terms of the points mentioned above but despite that, it falls behind IIIT Allahabad. The latter is famous for having very good information technology (IT). Both NIT Jaipur and IIIT Allahabad have more or less a good record of placements and infrastructure.
However, if you want to make something of yourself in the field of IT, then you cannot go wrong with IIIT Allahabad.
Whenever in doubt, always choose CSE over Metallurgy. Currently, CSE has a high demand. Back when a friend of mine was in his college, he mentioned how everyone went for MNIT blindly.
Back then, MNIT used to carry out classes of IIIT Kota. But currently, it is of no use! Even if you have to choose any college in the future, the streams Metallurgy and CS are likely to confuse you.
Just go for CS as Computer Science. As mentioned, it is in great demand and is better than Metallurgy. CS happens to secure your employment opportunities for the future. I also would not say that the placements are very bad if you go for MNIT, Metallurgy, the placements are fine, but not something that catches the eye, simultaneously. There is no tag of NIT here.
IIIT Allahabad and MNIT Jaipur are institutes of national importance. But if you like coding, it's not wise to search for options in ECE. ECE is a hardware-related program dealing with communication, whereas CS deals with software.
For the NIT tag, you can choose SVNIT. Among the IIITs, the best will be IIIT Bangalore ad it provides the best research opportunities. But, the best choice as per your interest is B.Tech Hons. Computational Sciences from DA-IICT.

All in all, MNIT Jaipur has an edge over NIT Surathkal. CSE from MNIT is one of the best CSE programs among NITs.
Having friends in both the colleges, I can say that MNIT Jaipur and IIIT Lucknow are equally good in their own ways. If you get a chance in any of these colleges, go for it.
Apart from getting admission in any one of either the only thing which would give you trouble is which field to choose? But, I would like to say that whatever field you choose, if you work hard and be honest with your studies you will land in a better place.

And talking about IIIT Lucknow, Their campus just started functioning in 2020. Earlier IIIT Lucknow runs from IIIT Allahabad campus.
Further, getting a job in core trade is very difficult to go to IIIT Lucknow but do check the infrastructure and previous year placement record of IIIT otherwise join MNIT Jaipur in mechanical without any second thought.
There are many things to consider while choosing a college such as placements, location, branch, choice, your expectations after 4 years of engineering life, etc.
If you have a liking for a particular branch then go to that college all things considered. Being a student of MNIT myself, I can say that, if you are only concerned about placements then MNIT Jaipur will prove to be a better choice.
