It is difficult to determine which is better; Mechanical Engineering in IIT Hyderabad or Engineering Physics at IIT Roorkee without knowing what your expectations from the degree are and your personal preferences. Nevertheless, I am here to spill a few facts about EP at IIT Roorkee.
I would recommend you go for an easier branch that has less workload so that you can focus well on coding and get placed right after BTech in IIT.
If you want to see rank-wise, of course, IIT Roorkee is the best option and you will notice a difference in a variety of parameters, but IIT Hyderabad is also a good option because it has good faculty members and offers all advanced courses. Placements are also good here. As a result, both are relatively similar.
Both are excellent Mtech programs, but IIT Roorkee has an advantage over IIT Hyderabad due to the older IIT and its superior research environment.
The worth and credibility of any department of a particular institute can be determined by the faculty pool of that concerned department. Generally,
The Mechanical Engineering department of IIT Hyderabad specifically, has an extensive faculty pool of many professors that are specialties in diverse fields. IIT Gandhinagar’s Mechanical Engineering department isn't necessarily inferior, but a major part of the faculty pool comprises temporary visiting professors.
Thus for Mechanical Engineering, IIT Hyderabad is a better option than IIT Gandhinagar.

Instead, it's better to invest 2 years for a full-time M.Tech in top universities like IIT Madras, IIT Bombay, IIT Delhi, IIT Kanpur, IIT KGP BITS, etc. Utilizing more time to prepare for six top universities will help you reach better heights career-wise. However, keep working and prepare for GATE alongside your job. In the meantime, you can clear BITS-HD, and PGEE for IIITs easily if you prepare at the GATE level. Even with an experience of 4 years, you can invest 2 years for M.Tech in top IITs and secure a good IT job in tech giants like Google, Amazon, McKinsey, etc.
It's better to consider other options and leave Executive MTech as the last option when all doors are closed.
